Why? Well think about it. People have been using jars for food storage for over 200 years. The canning process is simple, inexpensive, and yet an extremely effective way to sterilize and preserve food. Its only in the past 50 or so years that they have become "disposable".
There's also just something so interesting when you look at an object in a jar. I think it stems from that childhood need to catch frogs and lizards. You get you face right up to the glass and just stare until you mom makes you let it go and educates you on reptiles, amphibians, and salmonella. Its separated from the world. A specimen of our daily lives put on display in the round.

I use jars at my work bench to hold nuts, bolts, and screws. I use them at my desk to hold pencils. Sometimes I just decide to start collecting dryer lint and stick it in a jar to see how it looks.
